My family loves pancakes, but we usually save our pancake breakfasts for holidays and the occasional Saturday morning. Just yesterday, I prepared a special Saturday morning Valentines breakfast, and of course, pancakes were on the menu.
I know pancake mixes are available on the grocery store shelves for quick breakfasts, but there is something special about mixing up my own homemade, made-from-scratch pancake batter.
A couple years ago I experimented with ingredients until I came up with the perfect hearty pancake mix for my family. We love this recipe and hope you will try it out for your next special holiday or a cozy Saturday morning.
Holidays for Hearty Holiday Pancakes:
New Year’s Day Breakfast
Valentine’s Day Breakfast
Easter Morning Breakfast
Thanksgiving Breakfast
Christmas Morning Breakfast
Ingredients for Hearty Holiday Pancakes:
3 Tbsp. butter (melted)
2 tsp. vanilla extract for baking
1 egg
2 cups unsweetened vanilla almond milk or 1% milk
1/8 cup coconut sugar
4 tsp. baking powder
2 cups whole wheat flour or flour of your choice
Prep for Hearty Holiday Pancakes:
Begin with melted butter in a glass mixing bowl. Stir in vanilla and egg until mixed well.
Add milk, coconut sugar, and baking powder. Stir.
Add flour. Stir briefly with a spoon. Use a hand mixer on low speed to thicken the pancake batter.
Extra Tips for Hearty Holiday Pancakes:
*I use a griddle to cook my super-sized pancakes. I also melt butter on the griddle before adding the pancake batter.
*When you see popped bubbles on the tops of your pancakes, you know it’s time to flip them.
*Serve your Hearty Holiday Pancakes with thick cut bacon, eggs, and fresh fruit… and don’t forget the syrup or honey and a little extra butter!
*Recipe yields 6 super-sized pancakes or 12 mini pancakes.
