Easy Crustless Meat and Veggie Quiche Recipe

Quiche has been a menu item in my family’s “tested and tried” recipes for many years. When I was in college, I worked in a local tea room in my hometown, and this recipe is a variation of a quiche served on the daily lunch menu. I love meals that can be eaten at any time of the day, and quiche is a unique menu item.

This crustless meat and veggie quiche recipe is a sure hit at breakfast, lunch, or dinner. Sometimes I bake a bacon quiche, and other times I make a ham quiche. They are both easy, delicious options that anyone can make with this simple recipe.

The quiche bakes best in a 9x13 rectangular glass baking dish which allows for pretty square pieces of quiche that are super easy to serve at a shower or reception.

Serve with fresh fruit, green beans, homemade bread, muffins, or even chips and salsa.

Easy Crustless Meat and Veggie Quiche Recipe

Ingredients for Crustless Meat and Veggie Quiche:

12 oz. frozen pepper and onion blend (red, orange, green, and yellow peppers)

*optional ingredient: fresh baby spinach (wilted in avocado oil)

8 oz. 1/3 less fat cream cheese (softened)

12-14 eggs (Pasture raised eggs are my favorite.)

8 oz. block extra sharp cheese (2 cups shredded)

16 oz. diced ham or 1-2, 12 oz. packages bacon

Easy Crustless Meat and Veggie Quiche Recipe

Directions to Prepare Crustless Meat and Veggie Quiche:

Preheat oven to 375 degrees Fahrenheit.

Add pepper and onion blend and cream cheese to a glass bowl. Heat in the microwave until the onions and peppers are mostly thawed and the cream cheese is softened.

If adding baby spinach to the recipe, sauté in avocado oil and add to the pepper and onion/cream cheese mixture. Stir.

If using bacon, precook and set aside.

Add eggs, cheese, and meat to veggies. Stir thoroughly.

Prepare glass baking dish with avocado oil to prevent sticking.

Pour mixture into glass baking dish and bake at 375 degrees for one hour or until completely baked. Oven times may vary. Cover with foil the last 15 minutes of baking time to prevent over browning.
